With the sudden shift in the weather to these colder temperatures I thought a creamy tomato soup would be a perfect way to warm up this afternoon.  All the fresh, delicious produce available in the spring and summer add to my need to want to cook from scratch.  

I have never been an adventurous cook, but I really love to cook from scratch.  I started to get into cooking when my mother bought me a Barefoot Contessa cookbook for Christmas one year.  If you are getting into cooking, or love to cook I highly recommend any of  Ina Garten's cookbooks - she is a genius!  Her recipes are very easy to follow and she using big images throughout the whole book - something that is a must have for me:)  

This particular tomato soup recipe was pulled from her Back to Basics book.  There is something about starting with fresh veggies and ending with a delicious meal that makes me feel very accomplished - even if the recipe is easy to follow.  I didn't have cheddar cheese to make a typical grilled cheese sandwich, but substituting fresh mozzarella for the cheddar served me just fine:)  

Throughout the summer I have made a promise to myself to start to try more complex recipes - should be a fun little adventure.  Stay tuned...
